I love mezes, finger goods, snacking and picking. I love appetizers at restaurants because they come in the right portions and it's nice to have a glass of wine and explore tapas.<br />
<br />
I had the utmost pleasure sifting through this little cookbook of 64 pages of culinary delight.<br />
It was thanks giving weekend so the thyme in the below recipe hit the spot and this will make it's seasonal appearance at Christmas time too.<br />
My absolute favorite, favorite, favorite recipe was "Creamy Pancetta & Onion Tart". It was so good!<br />

Recipe:<br />
<br />
1 tbsp of Olive Oil<br />
170 g diced pancetta<br />
3 onions, sliced<br />
1 fat garlic, crushed<br />
1 tsp of sugar<br />
2 sprigs of fresh thyme <br />
375 g all butter puff pastry dough<br />
1 cup of creme fraiche<br />
sea salt and freshly ground pepper<br />
<br />
Preheat the oven to 400F, Gas 6 and place one of the baking sheets on the middle shelf to heat up<br />
<br />
Heat olive oil in a large frying pan over medium heat and the pancetta and cook until crisp.<br />
Remove from pan with a slotted spoon and drain on paper towel. Add the sliced onions and cook for about 10min.<br />
Stirring occasionally until they start to colour. Add garlic, sugar and leaves from thyme, cook for another minutes as onions carmalize. Remove from heat and stir in the pancetta.<br />
<br />
Roll out the puff pastry dough on a lightly floured work surface. Keep rolling until it's big enough to trim into a rectangle, about 12 x 8 inches. Using the tip of a knife score a border from the edge without cutting all the way through the dough.<br />
Carefully lift the dough onto the second baking sheet and slide into the preheated oven on top of the baking sheet. Cook for 7 minutes then remove from oven.<br />
<br />
Season creme fraiche with salt and pepper and spread half of it over the tart base. Season the onion and pancetta mixture with salt and pepper also and spread over the creme fraiche. Dot the remaining creme fraiche over the filling and return to the oven for a further 20min.<br />
<br />
Serve warm, cut into individual portions.<br />

and with the cold weather coming and since Fall is all about comfort food I'd like to share with you, my camera is missing so I apologize for not posting pictures:<br />
<br />
<div style="text-align: center;"> <b>Budget Beef Stew</b></div><br />
1 1/2 pds of small beef cubes for stew<br />
1/4 tsp salt<br />
1/4 tsp pepper<br />
1 tsp dried basil<br />
1 tbsp Worcestershire sauce<br />
1 clove of garlic, minced<br />
2 large onions<br />
4 medium size carrots<br />
5 medium sized potatoes<br />
1 can(14 1/2 ounces) diced tomatoes<br />
3 tbsp corn starch<br />
1/4 cup cold water<br />
<br />
1.Place rack in the middle of the oven and preheat to 300F<br />
2. Place beef in a 4 1/2 quart Dutch oven or flameproof casserole that has a tight fitting lid. Sprinkle the salt, pepper, basil and Worcestershire sauce evenly over beef. Sprinkle the garlic over the beef.<br />
3. Peel and quarter the onions and scatter pieces evenly over the mixture. Peel the carrots & cut them into 1-inch pieces. Add them to the pot. Peel and quarter the potatoes and scatter evenly over the mixture. Add tomatoes with their juice , scattering the tomatoes evenly over the mixture. Add 1/2 cup of water.<br />
4. Bake the stew covered for 2 hours . Remove from pot from the oven and stir gently so as not to break up the vegetables. Continue to bake, covered until the vegetables and meat are very tender about 1 hour.<br />
5. Remove the pot from the oven and place it on the stove top over low heat. Mix the cornstarch with cold water in a jar that has a lid. Cover the jar and shake well to remove any lumps. Pour the mixture little at a time evenly over the stew. Stir gently, adding the cornstarch mixture as necessary until the liquid reaches the desired thickness, about 3-5 minutes. Ladle the stew into large shallow bowls to serve.<br />

This is a fabulous book with so many ideas for cooking on a budget. Who doesn't want to eat cheaper? And who doesn't want to eat better? And who wouldn't like to sit down to a dinner of Salmon Pasta with Tomatoes and Dill, or Pan-Fried Pork Chops with Pepper Medley, or Enchanting Enchiladas, or Moroccan Meatballs over Couscous and know that any one of these meals (for four) costs less than $2 a serving? <br />

I recently visited with a friend of mine at her house. The kids played, dinner was preparing and Charlie made himself at home and opened her fridge. He saw pudding. Charlie will be 3 years old next month and he's never had pudding.<br />
No I'm not anal about junk food but I am about freshness, baking and cooking from scratch.<br />
That's the reason why I've never got it for him. I never really buy prepared food.<br />
However, I did let him have it. He and I had a few spoonfuls and that was it. I thought to myself, I have to learn how to make pudding.<br />
<br />
So as I was flipping through this fabulous cook book and I came across a recipe for Chocolate Mousse. It's sort of similar I thought. I read the directions and was amazed at how easy this was.<br />
<br />
<b>What you need</b>:<br />

4ounces of semi sweet or bittersweet chocolate<br />
4 tbsp of unsalted butter<br />
4 eggs separated<br />
1/8 tsp cream of tartar<br />

I am in love with this book. IN LOVE!<br />

This book has brought a passion to French cooking I knew was inside of me and it was just dying to come out. I was always intimidated because French cooking is grand and difficult. Well it's not difficult thanks to this book. If you love cooking you have to get this book.<br />
<br />
As I was creating savory puff pastry I was picturing myself in France and how Julia Child must have had a ball there. It's easy to fall in love with French cuisine and you can too.<br />
Feed your family delicious easy to prepare fresh, delicious, food from scratch.<br />
<br />
I just started this book. I might even try every recipe in this book. However today I made <i>Pomme de Terre Dauphine, pg,203</i>. <b> Potato Puffs</b>. There is a beautiful section in this book with a few pages about one of my most loved vegetables. The potato.<br />
<br />
What makes Potato Puffs special? They are light, fluffy and a delicious way to make potatoes. It's mashed potato with Savory Cream Puff pastry. Oh my as my heart flutters with delight.<br />
<br />
I added spinach so my toddler could get some extra greens. Because you know...I made these just for him. Hahaha.<br />
<br />
<br />
Don't use a food processor when you want to mash the potatoes. It will make it pasty.<br />
Get your masher out and with lovingly thoughts mash that potato. I never cook angry, the food always turns out awful and everyone is miserable after it too! It's all about "energy" when cooking.<br />
<br />
<br />
<i>What you need:</i><br />
<br />
1 1/2 pds of yukon gold potatoes, peeled, boiled and mashed(no cream, just add salt, pepper and mash)<br />
Savory Cream Puff Pastry (pg 221, <i>get the book</i>, LOL!)<br />
1/2 tsp of salt, 1/4 tsp pf pepper<br />
2 quarts of vegetable or peanut oil for deep frying<br />
<br />
This is really easy to make and takes no time. This would be a delicious as a h'or dourve as well. A little Aioli on top with fresh Lox? The Potato Puffs are best served warm.<br />
<br />
So while my potatoes and spinach were cooking I made my savory cream puff pastry. Yes, you have to get the book for the recipe.<br />
<br />
Savory Cream Puff Pastry consists of water, butter, salt, pepper, flour and eggs.<br />
<br />
<br />
Mix all that in with the mashed potatoes. Get your oil nice and hot to 375F and drop teaspoon 's of this heavenly mixture.<br />
<br />
I made them into little pancake shapes because my tot will devour these and it's easier for him to hold, dip and enjoy.<br />

I love baking scones. I don't know why but I feel rather like an accomplished housewife when I pull freshly baked scones from the oven or maybe it's the endless variations you can make with scones from sweet to savory.<br />
<br />
Here is my recipe for a proper British Scone from Elizabeth Germain from Cooks Illustrated.<br />
<br />
<u><b>Cream Scone with Currants</b></u><br />
<br />
2 cups all purpose flour (make them healthier with whole wheat, spelt or even buckwheat flour)<br />
<br />
3 tbsp of sugar<br />
<br />
1 tbsp baking powder<br />
<br />
1/2 tsp salt<br />
<br />
5 tbsp of cold, unsalted butter, cut into 1/4 inch pieces<br />
<br />
1/2 cup currants ( I like to use organic, unsulphured currants, especially if little ones like to nibble on them too!)<br />
<br />
1 cup heavy cream<br />
<br />

What would be my path to better health? Well exercise is important and I am doing that through <a href="http://www.fitchicks.ca/">Fit Chicks</a>, diet is extremely important as well. I always buy organic foods for my family, I try to get in as much veggies as possible but the one change I'd like to see are our snacking choices as we don't often eat together as a family so I prepare breakfast/lunch/dinner for my toddler, hubby leaves for work and doesn't get home til late so he ends up eating leftovers and at a later time. I always make sure he takes digestive enzymes when he's eating that late (11pm) and then heading to bed. I snack on Miss.Vickies, the wonderful saltiness from a bag of her chips gets my cravings salivating and I have to give in.<br />
Those are the changes I'd love to see change but with my husbands schedule it's not possible but I need to take care of myself and make better choices because it's so easy to make those choices for my son and husband. <br />

* Now to be honest, I only used Fontina and OKA and it was sooooo cheesy and soooo yummy. I also used Brown Rice macaroni. I just throw stuff when I cook and estimate measurements, so I'd day a cup if each of the above mentioned cheeses. <br />

<u><b>The Goods</b></u><br />

<li>8 Tablespoons Butter (Salted Butter)</li>
<li>2 whole Medium Onions, Cut In Half And Sliced Thin</li>
<li>10 slices Regular Bacon</li>
<li>1 Tablespoon Bacon Grease (reserved From Bacon Slices)</li>
<li>¼ cups All-purpose Flour</li>
<li>2 cups Whole Or 2% Milk</li>
<li>½ cups Half-and-half</li>
<li>2 whole Egg Yolks, Beaten</li>
<li> Salt And Pepper, to taste</li>
<li>½ cups Grated Gruyere Cheese</li>
<li>½ cups Grated Fontina Cheese</li>
<li>½ cups Grated Parmigiano Reggiano Cheese</li>
<li>4 ounces, weight Chevre (soft Goat Cheese)</li>
</ul><b><u>The Method</u></b><br />
Preheat oven to 350 degrees.<br />
Cook macaroni for half the time of the package instructions. Drain and set aside.<br />
Fry bacon until slightly, but not overly, crispy. Drain on a paper towel. Reserve grease.<br />
Melt 4 tablespoons butter in a skillet and then saute onions over medium-low heat for 10 to 12 minutes, or until golden brown and soft. Set aside.<br />
In a pot, melt 4 tablespoons butter (and add 1 tablespoon of the reserved bacon grease for good measure!). Sprinkle in flour and whisk to combine. Cook, stirring constantly, over medium heat for 1 minute. Pour in milk and half & half, then cook for 3 to 5 minutes or until thick. Reduce heat to low. Add salt & pepper to taste. (Do not undersalt!)<br />
Beat egg yolks and drizzle 1/4 cup hot mixture into the yolks, stirring constantly. Stir to combine. Pour egg mixture into sauce and cook for another minute.<br />
Add cheeses and stir until melted. Add onions and bacon and stir. Taste for seasonings and add more salt if needed. Add cooked macaroni and stir to coat. <br />
Pour into a baking dish and bake for 15 to 20 minutes or until sizzling and hot. Serve with red meat or a green salad. <br />

Well, lets just say I was blown away and thank god they are open year round at the Art Scape Building.<br />
Dammit that I work Saturdays! Well, I have to get up early and be there for 8am and get to work in time for 9:45am.<br />
I'll have to bring groceries with me to work which is fine because we have a great kitchen and there's no way I can drag Papa Ash with me, especially if that means he has to wake up at 7am.<br />
An awesome playground is there, performers and good food cooked for you as well, so grab a coffee, shop and play with your little ones when all the shopping is done.<br />

I open the fridge door and I smell, fresh organic meat. I look at my kitchen and I have fresh, tasty vegetables for my family to enjoy all grown in Ontario! Properly picked and cared for.<br />

I've interacted with farmers, I'm supporting them and that's just one of the reasons I treasure that I <i>can</i> go to Farmers Markets. The food tastes sooooooo good, try for yourself and there is a difference when love is put into the Earth by these farmers.<br />

If you haven't experienced shopping at Farmers Markets, what's stopping you?<br />
It is not that expensive( $2.00 for potatoes, $5 for farm fresh, organic eggs, veggies and fruit cost anywhere from $2-$6 and the amount is not small)<br />

I went with $100 cash (no interac at the Market) and came home with $35! <br />
I would say this is one of my favorites, I'm dying to go to Brickworks and this Wednesday I'm going to go to the one downtown in Nathan Phillips square.<br />

<div style="color: #38761d;"><u><b>So what did I buy?</b></u></div><br />
I wish I had a camera to take pictures (hubby has it as he's in New York, lucky S.O.B) but anyways I bought the freshest, yummiest, organic heirloom tomatoes, beautiful organic potatoes from <b><a href="http://www.everdale.org/node/70">Everdale Farms</a> </b>( I cooked with them twice today, I got a lot for $4!), fresh not frozen nitrate free side bacon and Charlies favorite Honey Garlic sausages from <b>Green Gate Farms</b>, I got farm fresh eggs and hormone free, organic chicken bones for stock from a Mennonite family farm called <b>Schefter Family</b>. Delicious carrots that came in purple, yellow, reddish and orange...organic as well from <b><a href="http://webontario.ca/Farm/">Woolerdale Farm</a>, <a href="http://www.stjohnsbakery.com/">St. Johns Bakery</a> </b>bread(my fave!), Baby Ash had a brioche for breakfast!<br />
I bought colorful string beans, <b><a href="http://www.monfortedairy.com/">Monforte Cheese</a></b> sheeps milk cream cheese and the best French Lavender oil from <b>Earthly Paradise</b>.<br />
Now I am safe in the kitchen from burns and a couple of drops on the diffuser in Baby Ash's room and he's in sushy bye sleepsville!<br />

<b><u style="color: #38761d;">W</u><u style="color: #38761d;">hat did I make pray tell? </u></b><br />

Well for <b>breakfast</b> I used the salt free/nitrate free bacon so my sweet boy could have a bite, I sauteed onion and spinach and used the farm fresh eggs that I bought and added some of the Monforte cream cheese and with some of the potatoes I bought well....home fries were in order! Lightly boiled then fried gently in olive oil, sprinkled some paprika, salt and dried rosemary. They were delish'!<br />

Break the bread into pieces. In a large bowl, soak the bread in the half & half until the liquid is absorbed, about 2 minutes. Mix in the chicken, egg, salt, pepper, dill, and the 3 tbsp of room temp. butter.<br />
Put in freezer for 10 min to firm up (don't forget it, LOL!) <br />
<br />
Remove the chicken from the freezer; it will still be very soft. Form the mixture into four oval cutlets and coat with bread crumbs.<br />
<br />
In a large, non stick frying pan, heat the remaining 2tbsp of butter and oil over moderate heat. Cook the cutlets until golden brown and just done. 4-5 min per side<br />

It's not a chilly fall evening but I was in the mood for something this!<br />
<br />
<u><b>The goods</b></u><br />
2 tbsp of cooking oil<br />
4 chicken thighs<br />
4 chicken drumsticks<br />
3/4 tsp salt<br />
1/4 tsp fresh ground black pepper<br />
1 tbsp flour<br />
1 cup apple cider<br />
1 1/2 cup of low sodium chicken stock<br />
1 onion, cut into thin slices (phew!)<br />
1 pd parsnips, cut into 1-inch pieces<br />
2 carrots, cut into 1 inch pieces<br />
1/2 tsp dried thyme<br />
<br />
<u><b>The deed </b></u><br />
Heat the oven to 400F. In a large pot or Dutch ovens, heat oil over moderately high heat. Season the chicken thighs and drumsticks with 1/4 salt & pepper.<br />
Cook chicken until browned, turning, about 8 minutes in all. Remove. Pour off all but 1 tbsp of the fat from the pot.<br />
Reduce the heat to moderate and stir in flour. Whisk in the cider(yum!) and the broth and bring to a simmer, scraping the bottom of the pot to dislodge any brown bits. Add the onion, parsnips, carrots, thyme and salt. Simmer, partially covered for 10 minutes.<br />
Return chicken to the pot, bring stew back to a simmer, cover and put in preheated oven until the chicken is done and the veggies are tender, about 15 minutes.<br />

I was talking with my farmer where I buy my eggs from( I love visiting Farmers Markets) and I asked him "how are your eggs washed?".<br />
This whole topic also started with a co worker of mine as we were talking eggs and she mentioned an article she read about the chemicals used in commercial egg factories.<br />
She also brings me farm fresh eggs when I can't make it to the market.<br />
I also have a regular client of mine(who writes an <a href="http://duckandcake.blogspot.com/">awesome foody blog</a>) that brings me farm fresh eggs and the eggs that she brings....wait folks; the farmer feeds her hens with Bee Propolis(she sells her own, royal jelly/beewax line) so I have super healthy fantastic eggs!<br />
You can say I'm little <i>eggstatic</i> about farm fresh produce!<br />
They taste so rich, they aren't thin and watery with a sad looking pale yolk. There is a difference.<br />
So back to my farmer, he was kinda surprised by my question because no one has ever asked him that he said just water with a little elbow grease.<br />
However, you can't just submerge them and let them soak...bacteria will get into the egg itself, there is a method.<br />
It works in the "same' way that when submerged in water the pores open and do you know what is used to clean commercial eggs?<br />
Would you be surprised to know that <b>chlorine</b> is used and <b>mineral oil</b>? Yep, mineral oil to give it that nice shine to make it more appealing to consumers.<br />
